Ingredients:
120g nuts, preferably cashew nuts or almonds
80g dried apricots or other dried fruit
20g oats
4 cm piece of ginger or ground ginger
1/2 tsp mixed spice
2 tbsp honey or syrup
Pinch of ground cardamom
Method:
Toast the cashew nuts in the oven at 180 degrees Celsius for 4 minutes.
Blitz 40g of nuts into fine dust. Set aside.
Blitz the rest of the nuts, dried fruit and oats until finely chopped. Finely grate in the ginger, then, add the mixed spice.
Blitz again until finely ground, then, add the honey.
Blitz for another 1-2 minutes.
Roll into balls, drop them into the nut dust and shake to coat. Or a, alternately, in desiccated coconut.
They can be stored for up to 2 weeks in an airtight container.
